Deliciously baked russet potatoes stuffed with a creamy garlic Parmesan shrimp mixture, perfect as a hearty and flavorful main dish or side.

Ingredients

Potatoes

  • 4 large russet potatoes

Shrimp Mixture

  • 1 lb shrimp, peeled and deveined (fresh or frozen)
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup shredded Parmesan cheese
  • 1/2 cup sour cream
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • salt, to taste

Garnish

  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat and prepare potatoes: Preheat your oven to 400°F (200°C) and wash the potatoes thoroughly. Poke holes in them with a fork to allow steam to escape during baking.
  2. Bake potatoes: Place the potatoes directly on the oven rack and bake for 45-60 minutes until they are tender and easily pierced with a fork.
  3. Sauté garlic: While potatoes bake, heat butter in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  4. Cook shrimp: Add the shrimp along with paprika, salt, and black pepper to the skillet. Cook for 3-4 minutes until shrimp turn pink and opaque.
  5. Add sour cream and Parmesan: Reduce heat to low and stir in the sour cream and Parmesan cheese until fully combined and creamy.
  6. Prepare potatoes: Once potatoes are done, carefully slice them open lengthwise and fluff the insides with a fork to create space for the filling.
  7. Stuff potatoes: Spoon the creamy shrimp mixture generously into each potato. Optionally, sprinkle additional Parmesan cheese on top.
  8. Garnish and serve: Garnish the stuffed potatoes with fresh chopped parsley before serving for a burst of color and flavor.
