Ingredients
Potatoes
4 large russet potatoes
Shrimp Mixture
1 lb shrimp, peeled and deveined (fresh or frozen)
4 tablespoons butter
4 cloves garlic, minced
1 cup shredded Parmesan cheese
1/2 cup sour cream
1 teaspoon paprika
1/2 teaspoon black pepper
salt, to taste
Garnish
2 tablespoons fresh parsley, chopped
Instructions
Preheat and prepare potatoes: Preheat your oven to 400°F (200°C) and wash the potatoes thoroughly. Poke holes in them with a fork to allow steam to escape during baking.
Bake potatoes: Place the potatoes directly on the oven rack and bake for 45-60 minutes until they are tender and easily pierced with a fork.
Sauté garlic: While potatoes bake, heat butter in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
Cook shrimp: Add the shrimp along with paprika, salt, and black pepper to the skillet. Cook for 3-4 minutes until shrimp turn pink and opaque.
Add sour cream and Parmesan: Reduce heat to low and stir in the sour cream and Parmesan cheese until fully combined and creamy.
Prepare potatoes: Once potatoes are done, carefully slice them open lengthwise and fluff the insides with a fork to create space for the filling.
Stuff potatoes: Spoon the creamy shrimp mixture generously into each potato. Optionally, sprinkle additional Parmesan cheese on top.
Garnish and serve: Garnish the stuffed potatoes with fresh chopped parsley before serving for a burst of color and flavor.
Notes
Use fresh or thawed shrimp for best texture and flavor.
If preferred, substitute sour cream with Greek yogurt for a tangier taste with added protein.
Ensure potatoes are tender all the way through by testing with a fork after 45 minutes; baking time may vary by potato size.
For a crispier skin, you can rub the potatoes with a bit of oil and salt before baking.
Additional vegetables like chopped spinach or mushrooms can be added to the shrimp mixture for extra nutrients and flavor.
