  • 1 pound ground beef (or ground lamb, chicken, or turkey)
  • 1 onion, diced
  • 3 cloves garlic, chopped
  • 1/4 teaspoon cinnamon (optional)
  • 2 teaspoons oregano
  • 4 cups baby spinach
  • 1/3 cup kalamata olives, sliced
  • 1/3 cup green olives, sliced
  • 1/3 cup feta, crumbled
  • Salt and pepper to taste

Fresh Herbs

  • 3 green onions, thinly sliced
  • 2 tablespoons parsley, chopped
  • 1 tablespoon mint, chopped
  • 1 tablespoon dill, chopped

Instructions

  1. Cook the Ground Beef and Onion: Heat a large skillet over medium heat. Add the ground beef and diced onion, breaking the meat apart as it cooks. Continue cooking until the beef is browned and fully cooked. Drain any excess grease from the skillet.
  2. Add Aromatics and Spices: Stir in the chopped garlic, cinnamon (if using), and oregano. Cook for about one minute until the mixture becomes fragrant.
  3. Wilt the Spinach: Add the baby spinach to the skillet and mix it in with the beef and seasonings. Cook for 2-3 minutes until the spinach has wilted.
  4. Add Olives and Feta: Stir in the sliced kalamata and green olives along with the crumbled feta cheese. Season with salt and freshly ground black pepper to taste.
  5. Finish with Fresh Herbs: Mix in the sliced green onions, chopped parsley, mint, and dill. Stir well to combine all the flavors and serve immediately.

Notes

  • Optionally replace the spinach with kale for a different green.
  • Add a 14.5-ounce can of diced tomatoes and bring to a boil before adding spinach for a saucier version.
  • Cook rice or pasta simultaneously while the beef cooks for a complete meal ready at the same time.
  • Add a splash of lemon juice for extra brightness.
  • Serve with a dollop of tzatziki sauce to complement the flavors.
