Chicken Skewers

Feta Fries

  • 4 russet potatoes, cut into ¼-inch-thick matchsticks
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup mixed herbs – dill, basil, parsley
  • 1 teaspoon lemon zest
  • 1 clove garlic, grated
  • 2 tablespoons toasted sesame seeds
  • 1/2 cup crumbled feta cheese

Instructions

  1. Prepare Marinade: In a bowl, combine the olive oil, chopped shallots, garlic, dried oregano, chipotle chili powder, honey, harissa sauce, lemon zest, salt, and black pepper. Mix well.
  2. Marinate Chicken: Add the bite-sized chicken breast chunks to the marinade and toss to coat evenly. Let sit for at least 10 minutes if time allows to deepen the flavors.
  3. Preheat Oven: Set the oven temperature to 450°F (232°C) to prepare for baking the chicken and fries.

Notes
