These Greek yogurt brownies offer a deeply chocolaty and indulgent treat with a moist, fudgy center and a slight tang from Greek yogurt. They are rich in flavor but less heavy than traditional brownies, making them a perfect dessert to enjoy without feeling overly dense.

Ingredients

Brownie Batter

  • ½ cup melted butter
  • ¾ cup sugar
  • 1 egg
  • ½ cup Greek yogurt
  • 1 teaspoon vanilla extract
  • ½ cup cocoa powder
  • ¾ cup all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup chocolate chips or chopped chocolate

Instructions

  1. Mix Wet Ingredients: In a mixing bowl, whisk the melted butter and sugar until smooth and glossy. Add the egg, Greek yogurt, and vanilla extract. Mix until creamy and well combined — the mixture should look thick and silky.
  2. Add Dry Ingredients: Sift the cocoa powder, all-purpose flour, baking powder, and salt into the wet ingredients. Gently fold the ingredients together just until combined to avoid overmixing, which can make the brownies less fudgy.
  3. Incorporate Chocolate Chips: Fold in the chocolate chips or chopped chocolate if using. Be careful not to overwork the batter.
  4. Prepare Pan and Bake: Line an 8×8-inch (20×20 cm) baking pan with parchment paper. Pour the batter into the pan and smooth the top. Optionally, sprinkle a few chocolate chips on the surface for extra texture and flavor.
  5. Bake: Bake in a preheated oven at 350°F (175°C) for 20–24 minutes. The edges should be set while the center remains slightly soft to achieve a gooey middle.
  6. Cool and Serve: Let the brownies cool for at least 15 minutes before slicing. This resting time helps set the texture and enhances the fudginess.

Notes

  • Taste & Texture: These brownies have a deep, rich chocolate flavor with an ultra-moist, fudgy center and a slight tanginess from the Greek yogurt. They have a glossy top and chewy edges.
  • Storage: Store in an airtight container in the fridge for 4–5 days; the brownies will become fudgier overnight.
  • Freezing: Freeze individually wrapped brownies for up to 2 months.
  • Reheating: Microwave for 10–12 seconds to warm for a gooey, freshly baked taste.
