Ingredients

Green Goddess Marinade

  • 1/2 cup mayonnaise
  • 1/4 cup buttermilk
  • 1/2 cup fresh chives, chopped
  • 1/4 cup fresh parsley, roughly chopped
  • 1/4 cup fresh mint leaves
  • 2 tablespoons fresh tarragon, chopped
  • 1 teaspoon red chili flakes
  • 1 tablespoon champagne vinegar
  • 2 teaspoons capers
  • 2 garlic cloves, minced
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Chicken Skewers

  • 2 pounds boneless, skinless chicken thighs, fat removed, cut into 1/2-inch pieces
  • Bamboo skewers, soaked overnight in water

Instructions

  1. Prepare the marinade: In a medium bowl, combine mayonnaise, buttermilk, chopped chives, parsley, mint, tarragon, red chili flakes, champagne vinegar, capers, and minced garlic. Season the mixture with kosher salt and freshly ground black pepper to taste. Mix thoroughly until all ingredients are well incorporated.
  2. Marinate the chicken: Place the cut chicken thigh pieces into a large bowl or sealable bag. Pour the prepared Green Goddess marinade over the chicken, ensuring all pieces are well coated. Cover and refrigerate for at least 2 hours, allowing the flavors to infuse deeply into the chicken.
  3. Prepare the skewers: Pre-soak bamboo skewers in water overnight or for at least 1 hour to prevent them from burning on the grill. Thread the marinated chicken pieces evenly onto each skewer, leaving a little space between pieces for even cooking.
  4. Preheat the grill: Heat your grill to medium-high heat, approximately 400°F (204°C), ensuring it’s clean and lightly oiled to prevent sticking.
  5. Grill the skewers: Place the chicken skewers on the grill and cook for about 8–10 minutes total, turning occasionally to achieve even grilling and slightly charred edges. Make sure the chicken reaches an internal temperature of 165°F (74°C) before removing.
  6. Serve: Remove skewers from the grill and let them rest for a few minutes. Serve the Green Goddess Chicken Skewers hot, optionally with fresh lemon wedges or a side salad for a refreshing contrast.

Notes

  • For best results, soak bamboo skewers overnight to prevent burning during grilling.
  • Chicken thighs provide more flavor and juiciness compared to breast meat, but you can substitute if preferred.
  • Adjust red chili flakes according to your preferred spice level.
  • Marinating for longer enhances flavor; overnight marination is recommended if time permits.
  • Serve with a fresh green salad or grilled vegetables for a complete meal.
