Ingredients

For the Bell Peppers:

  • 1 lb. Baby Bell Peppers
  • ¼ cup Maple Syrup
  • 2 tbsp. Fresh Herbs (dill, basil, and mint), chopped
  • 2 tbsp. Olive Oil
  • 1 tsp. Fine Sea Salt

For the Minty Feta Dipping Sauce:

  • 8 oz. block Feta Cheese
  • ½ cup Plain Greek Yogurt
  • ¼ cup Fresh Dill
  • ¼ cup Fresh Mint Leaves
  • Juice of 1 Lemon
  • Salt & Black Pepper, to taste

Instructions

  1. Marinate the Bell Peppers: In a large bowl, toss together the baby bell peppers, maple syrup, fresh chopped herbs, olive oil, and sea salt. Cover the bowl and let the mixture marinate for at least 15 minutes to infuse the flavors.
  2. Preheat the Grill: Heat your grill to 450°F, ensuring it is hot enough for grilling the peppers to get a nice char.
  3. Grill the Bell Peppers: Place the marinated baby bell peppers on the grill racks. Cook for 4-5 minutes on each side until they develop a light char and are tender but still crisp.
  4. Prepare Feta Bites: Slice the block of feta cheese in half. Take one half and cut it into tiny bite-sized pieces. Toss these feta bites in the remaining marinade from the peppers and set aside to absorb the flavors.
  5. Make the Minty Feta Dipping Sauce: Add the remaining half of the feta cheese to a food processor or blender along with the Greek yogurt, fresh dill, fresh mint leaves, and lemon juice. Blend until smooth, adding a little water if needed to thin the sauce to your desired consistency. Season with salt and black pepper to taste. Transfer the sauce to a small dish.
  6. Assemble and Serve: Arrange the grilled baby bell peppers on a serving platter. Top them with the marinated feta bites and drizzle any leftover marinade over the top.
