This Grilled Baby Bell Pepper Appetizer features perfectly charred baby bell peppers marinated in a maple-herb mixture, paired with a refreshing minty feta dipping sauce. Ingredients

For the Bell Peppers:

  • 1 lb. Baby Bell Peppers
  • ¼ cup Maple Syrup
  • 2 tbsp. Fresh Herbs, chopped (dill, basil, and mint)
  • 2 tbsp. Olive Oil
  • 1 tsp. Fine Sea Salt
  • BUBBL’R Lemon Lime Twist’r, for serving

For the Minty Feta Dipping Sauce:

  • 8 oz. block Feta Cheese
  • ½ cup Plain Greek Yogurt
  • ¼ cup Fresh Dill
  • ¼ cup Fresh Mint Leaves
  • Juice of 1 Lemon
  • Salt & Black Pepper, to taste

Instructions

  1. Marinate the Peppers: In a large bowl, toss together baby bell peppers, maple syrup, fresh chopped herbs, olive oil, and fine sea salt. Cover the bowl and allow the peppers to marinate for at least 15 minutes to absorb the flavors.
  2. Preheat the Grill: Heat your grill to 450°F (232°C) to ensure a hot cooking surface for proper charring and roasting of the peppers.
  3. Grill the Peppers: Arrange the marinated baby bell peppers on the grill rack. Cook them for 4 to 5 minutes on each side, turning carefully, until they develop a light char and soften slightly.
  4. Prepare Feta Bites: Slice the feta block in half. From the first half, cut into small, bite-sized pieces. Toss these feta bites gently in any remaining marinade from the peppers to infuse flavor, then set aside.
  5. Make the Minty Feta Dipping Sauce: Take the second half of the feta block and place it in a food processor or blender along with plain Greek yogurt, fresh dill, fresh mint leaves, lemon juice, salt, and black pepper. Blend until smooth, adjusting texture with a splash of water if needed. Taste and season accordingly. Transfer the sauce into a small dish for serving.
  6. Assemble and Serve: Arrange the grilled baby bell peppers on a serving platter. Top them with the marinated feta bites and drizzle any leftover marinade over the top. Serve alongside the minty feta dipping sauce and chilled BUBBL’R Lemon Lime Twist’r for a refreshing beverage pairing.
