Ingredients

Cheese and Fruit

  • 16 oz round Brie Cheese
  • 2 Fresh Peaches, pitted and thinly sliced
  • 1 ½ cups Fresh Grapes of choice

Bread and Toppings

  • 1 Baguette, sliced in half lengthwise
  • 4 tbsp. Melted Butter
  • 1/3 cup Fresh Basil, chopped
  • ¼ cup Honey, or hot honey
  • Black Pepper, to taste

Instructions

  1. Prepare the Grill: Heat up your grill using Kingsford Charcoal according to the manufacturer’s instructions to ensure it reaches a proper temperature for cooking.
  2. Prepare the Skillet Ingredients: In an oven-safe skillet, combine the thinly sliced peaches with 1 tablespoon of melted butter. Place the Brie cheese in the center of the skillet, then arrange the peaches and grapes around the Brie’s edges. Season everything with black pepper and drizzle the top with honey.
  3. Butter the Baguette: Brush the sliced baguette half lengthwise evenly with the remaining melted butter, preparing it for toasting on the grill.
  4. Grill Brie and Fruit Skillet: Place the skillet on the preheated grill, cover, and cook for 2-3 minutes to start warming the fruit and cheese.
  5. Toast the Baguette Slices: While the skillet is on the grill, put the buttered baguette slices butter-side down onto the grill surface. Cook them for 1-2 minutes until they become crisp and golden, then remove from the grill and slice into bite-sized pieces.
  6. Finish Melting the Brie: Leave the skillet with Brie and fruit on the grill to continue cooking uncovered for an additional 5-6 minutes, allowing the Brie to melt completely and become bubbly.
  7. Serve: Carefully remove the skillet from the grill using a hot pad, garnish with freshly chopped basil, and serve immediately alongside the toasted crostini for dipping or topping.

Notes

  • Use ripe but firm peaches for best grilling results to prevent them from becoming too mushy.
  • Hot honey can be substituted for regular honey to add a spicy kick.
  • If you don’t have an oven-safe skillet, a cast-iron skillet is ideal for grilling.
  • Ensure the grill is properly heated before cooking to achieve the right texture in bread and Brie.
  • Serve immediately to enjoy Brie at its meltiest and crostini at their crispest.
  • Can be paired with a crisp white wine like Sauvignon Blanc for an elegant appetizer experience.
