This grilled watermelon recipe offers a refreshing and unique summer side dish with a spicy, tangy corn topping and creamy feta and avocado, perfect for outdoor gatherings and BBQs.

Ingredients

Grilled Watermelon

  • 6 watermelon wedges, each about 1.5 inches thick
  • Cooking spray, for the grill

Corn Topping

  • 1½ cups raw corn kernels
  • ½ cup diced red onion
  • ½ cup diced red bell pepper
  • 1 garlic clove, minced
  • Heaping ¼ teaspoon sea salt
  • 4 teaspoons Tabasco Green Sauce*

Garnishes

  • ½ cup crumbled feta cheese
  • 1 small avocado, diced
  • Mint and/or basil leaves
  • Lime wedges, optional

Instructions

  1. Preheat the Grill: Preheat your grill to medium-high heat to ensure it is hot enough to create appealing char marks on the watermelon wedges.
  2. Prepare the Corn Topping: In a medium mixing bowl, combine the raw corn kernels, diced red onion, diced red bell pepper, minced garlic, sea salt, and Tabasco Green Sauce. Mix well and chill this mixture until you are ready to use it to allow flavors to meld.
  3. Grill the Watermelon: Spray the grill grates with cooking spray to prevent sticking. Place the watermelon wedges on the grill and cook for 2 to 3 minutes per side, until visible char marks form and the watermelon is slightly warmed but still firm.
  4. Assemble and Serve: Remove the watermelon wedges from the grill and let them cool for a few minutes. Then, top each wedge with a generous spoonful of the chilled corn mixture. Sprinkle crumbled feta cheese and diced avocado over the top. Garnish with fresh mint and/or basil leaves. Serve with additional Tabasco Green Sauce or lime wedges on the side, if desired.

Notes

  • If you do not have Tabasco Green Sauce, substitute with fresh lime juice and diced jalapeños for similar tang and spice.
  • Use ripe but firm watermelon wedges to ensure they hold up well on the grill.
  • This dish is best served immediately after assembling to enjoy the contrast of warm grilled watermelon and chilled toppings.
  • For a vegan option, omit the feta cheese or substitute with a plant-based cheese alternative.
