Ingredients

Halloumi and Marinade

  • 250g halloumi, sliced 1-2 cm thick
  • 1 tablespoon olive oil
  • 2 tablespoons honey
  • ½ lemon, juiced
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon red pepper flakes

Yogurt Sauce

  • 4 tablespoons Greek yogurt
  • 1 lemon, juiced
  • 2 garlic cloves, minced

Salad

  • 1 cucumber, finely sliced
  • 1 red onion, finely sliced
  • ½ lemon juice
  • 2 tablespoons parsley, finely chopped
  • 2 tablespoons mint leaves, finely chopped

  • 4 flatbreads

Instructions

  1. Prepare the Halloumi: Remove the halloumi from its packaging and cut it into thin slices about 1-2 cm thick for even cooking and better marinade absorption.
  2. Make the Marinade: In a bowl, mix honey, red pepper flakes, dried thyme, lemon juice, and olive oil. Add a splash of water if the marinade seems too thick to help loosen it.
  3. Marinate the Halloumi: Pour the marinade over the sliced halloumi, making sure each piece is well coated. Let it marinate for 30 minutes to 1 hour to absorb the flavors fully.
  4. Cook the Halloumi: Heat a pan over high heat. Fry the marinated halloumi slices for 2 minutes on each side until golden brown and slightly crispy.
  5. Drizzle Remaining Marinade: Transfer the cooked halloumi to a serving platter and drizzle any leftover marinade over the top for added flavor.
  6. Prepare the Yogurt Sauce: Combine Greek yogurt with lemon juice and minced garlic to create a fresh and tangy sauce to complement the halloumi.
  7. Make the Salad: Mix finely sliced cucumber and red onion with lemon juice, chopped parsley, and mint leaves for a refreshing crunchy salad.
  8. Assemble the Wraps: Spread the yogurt sauce on each flatbread, add the salad, then top with hot honey halloumi. Wrap tightly and serve immediately for best texture and flavor.
