Perfect as a party appetizer, this easy-to-make recipe yields bite-sized sandwiches that are flavorful and satisfyingly cheesy. Ingredients

Sandwich Ingredients

  • 1 pkg (16 rolls) Kings Hawaiian Rolls
  • 64 small slices of cheese (American or your preferred melting cheese)
  • 1/2 yellow onion, diced

Butter Mixture

  • 1/2 cup unsalted butter, melted (1 stick)
  • 1 tsp garlic powder
  • 1 tsp rosemary

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit and line a large baking sheet with a baking mat or aluminum foil to prevent sticking and make cleanup easy.
  2. Prepare Onion: Dice half a yellow onion into small pieces and set aside to be used later in the assembly of the sandwiches.
  3. Slice Rolls: On a cutting board, slice each Hawaiian roll into four small squares, which will produce 32 mini grilled cheese sandwiches in total.
  4. Melt Butter and Mix Seasonings: In a small microwave-safe bowl, cut the butter into small cubes to melt evenly. Melt using the microwave’s melt butter button or in 15-second intervals at half power. Once melted, stir in the garlic powder and rosemary thoroughly.
  5. Butter Bread: Lay out the sliced pieces of bread on the baking sheet. Use a silicone basting brush to coat one side of each bread piece with the melted butter and seasoning mixture evenly.
  6. Assemble Sandwiches: Flip each piece so that the buttered side is down. On the unbuttered side, place a single layer of cheese slices, sprinkle some diced onions on top of the cheese, then add a second layer of cheese. Place the second bread slice on top of the cheese to form a sandwich.
  7. Butter Tops: Using the basting brush, coat the tops of the sandwiches with the remaining butter seasoning mixture to achieve a golden crust when baked.
  8. Bake: Place the baking sheet in the oven and bake for 10 minutes, or until the bread turns golden brown and the cheese inside has melted completely.
  9. Serve: Remove from oven and serve warm. These mini grilled cheese sandwiches pair wonderfully with tomato soup or your favorite dipping sauce.

Notes

  • The quantity of sandwiches may vary depending on the size of the Hawaiian rolls you purchase; typically, a 16-roll package yields 32 mini sandwiches.
  • Choosing slices of cheese that melt well, such as American, cheddar, or a blend, will provide the best gooey texture.
  • If fresh rosemary is preferred over dried, finely chop and use about 1 teaspoon.
  • These sandwiches are ideal for serving immediately but can be kept warm in a low oven for a short period.
  • Using a silicone basting brush ensures even coating of butter and seasoning without tearing the bread.
