Ingredients

Vegetables & Legumes

  • 2 large sweet potatoes, peeled and diced
  • 1 can black beans, rinsed and drained
  • 1 medium onion, diced
  • 3 cloves garlic, minced

Liquids & Oils

  • 4 cups vegetable broth
  • 2 tablespoons olive oil

Spices & Seasonings

  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Garnishes

  • 1 lime, juiced (for serving)
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Prepare Ingredients: Peel and dice the sweet potatoes, dice the onion, and mince the garlic cloves thoroughly to ensure even cooking and flavor distribution.
  2. Sauté Onion and Garlic: Heat olive oil in a pot over medium heat. Add diced onion and sauté until translucent and soft, about 5 minutes. Then add the minced garlic and cook for an additional minute until fragrant, being careful not to burn it.
  3. Cook Sweet Potatoes: Add the diced sweet potatoes to the pot and cook them together with the onion and garlic for 2-3 minutes, stirring occasionally to coat them with the flavors and oil.
  4. Season: Sprinkle the cumin, smoked paprika, salt, and pepper over the vegetables. Stir well to evenly distribute the spices, releasing their aromas.
  5. Add Broth and Simmer: Pour in the vegetable broth, increase the heat to bring the mixture to a boil, then reduce the heat to low and simmer the soup uncovered for 15-20 minutes or until the sweet potatoes are tender and easily pierced with a fork.
  6. Add Black Beans: Stir in the rinsed and drained black beans. Continue cooking for 5 more minutes to heat the beans through and meld the flavors.
  7. Optional Blending: For a creamier texture, blend a portion of the soup using an immersion blender or by transferring part to a blender. Return blended portion to the pot and mix well.
  8. Season to Taste: Taste the soup and adjust the seasoning if needed by adding lime juice for brightness and more salt or pepper if desired.
  9. Serve and Garnish: Ladle the soup into bowls and garnish with freshly chopped cilantro and an extra squeeze of lime juice for a fresh finish.
