A light and fluffy strawberry dessert made with gelatin, cottage cheese, and Greek yogurt for a creamy texture and extra protein boost.

Ingredients

  • 1 package (3 ounces) strawberry gelatin mix
  • 1 cup boiling water
  • 1 cup cold water
  • 1 cup cottage cheese
  • 1 cup plain or vanilla Greek yogurt
  • 1 cup whipped topping (or homemade whipped cream)
  • 1 cup fresh strawberries, chopped

Instructions

  1. Dissolve the strawberry gelatin mix in 1 cup of boiling water, stirring until completely dissolved.
  2. Add 1 cup of cold water and stir well.
  3. Refrigerate for 20–30 minutes, until slightly thickened but not fully set.
  4. Blend the cottage cheese until smooth if a creamier texture is desired.
  5. Stir the Greek yogurt into the slightly thickened gelatin mixture.
  6. Gently fold in the blended cottage cheese and whipped topping until light and fluffy.
  7. Fold in the chopped strawberries.
  8. Refrigerate for at least 1–2 hours, or until fully set and fluffy.

Notes

  • Use sugar-free gelatin to reduce sugar content.
  • Add a scoop of vanilla protein powder for extra protein.
  • Swap strawberry gelatin for raspberry or cherry for different flavors.
  • Thaw and drain frozen strawberries before using.
  • Store in an airtight container in the refrigerator for up to 3 days.
  • Blend cottage cheese for a smoother texture if preferred.
