Ingredients

Dry Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup medium grind cornmeal
  • 1 tablespoon baking powder

Wet Ingredients

  • 1 stick cold salted butter, shredded (about 8 tablespoons)
  • 1/2 cup grated parmesan cheese
  • 1 cup whole milk
  • 2 teaspoons honey

Honey Butter

  • 4 tablespoons salted butter
  • 1-2 teaspoons honey
  • 1 tablespoon fresh chopped thyme
  • 1 pinch sea salt

Instructions

  1. Preheat and Prepare Skillet: Preheat the oven to 425° F. Rub a 10-inch cast iron skillet with butter to prevent sticking and add flavor.
  2. Mix Dry Ingredients: In a large bowl, combine the all-purpose flour, cornmeal, baking powder, garlic powder, and salt thoroughly.
  3. Add Butter and Cheese: Using your hands, mix in the shredded cold butter and grated parmesan cheese until the mixture resembles coarse crumbs.
  4. Add Milk and Honey: Pour in the whole milk and add the honey. Mix gently until just combined, making sure not to overwork the dough.
  5. Fold the Dough: Turn the dough out onto a floured surface. Pat it into a 1-inch-thick rectangle. Fold one side into the center, then fold the other side on top creating a letter fold. Turn the dough so it is horizontal, flatten into a rectangle again. Repeat the folding step once more. Finally, flatten the dough to a 3/4-inch thickness.
  6. Cut Biscuits: Using a 3-inch biscuit cutter, cut the dough into circles. Re-roll the scraps gently and cut additional biscuits.
  7. Arrange and Prepare for Baking: Arrange the biscuits evenly in the prepared cast iron skillet. Brush the tops with a bit of milk, then place 2 tablespoons of butter around the biscuits.
  8. Bake Biscuits: Bake in the preheated oven for 20-22 minutes until golden brown and puffed.
