Crispy baked spring rolls filled with a creamy blend of feta and ricotta cheeses, enhanced with fresh parsley and a kick of red pepper flakes, then drizzled with a sweet and spicy chili honey glaze for an irresistibly flavorful appetizer.

Ingredients

Filling

  • 1 cup crumbled feta cheese
  • ½ cup ricotta cheese
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon red pepper flakes
  • Salt and pepper, to taste

Coating & Assembly

  • 1 package of spring roll wrappers (about 1012 wrappers)
  • ½ cup all-purpose flour
  • 1 egg, beaten
  • 1 cup breadcrumbs (panko preferred for extra crunch)
  • Cooking spray or olive oil for frying

Drizzle

  • ½ cup chili honey (store-bought or homemade)

Instructions

  1. Prepare the filling: In a mixing bowl, combine the crumbled feta and ricotta cheeses. Add the chopped fresh parsley, red pepper flakes, salt, and pepper. Mix thoroughly until all ingredients are well integrated, creating a creamy and flavorful filling.
  2. Assemble the rolls: Lay out a spring roll wrapper on a clean surface. Place a generous spoonful of the cheese filling in the center. Fold the edges over the filling and roll tightly to enclose it, sealing the edges using a little water or beaten egg to ensure it stays closed during baking.
  3. Set up the breading station: Arrange three shallow dishes or bowls – one with all-purpose flour, the second with beaten egg, and the third with panko breadcrumbs. This setup will help you evenly coat each roll.
  4. Coat the rolls: Dip each assembled roll first into the flour, shaking off any excess. Then submerge into the beaten egg, ensuring a complete coating, and finally roll in the breadcrumbs to completely cover. This triple coating will create a crispy and crunchy crust once baked.
  5. Preheat the oven: Preheat your oven to 400°F (200°C) to get it ready for baking the rolls to a perfect golden crisp.
  6. Bake the rolls: Place the coated rolls on a baking sheet lined with parchment paper or a lightly greased surface. Lightly spray the rolls with cooking spray or brush with olive oil to promote browning and crispiness. Bake for 20-25 minutes, turning halfway through if desired, until the rolls are golden brown and crispy on the outside.
  7. Prepare chili honey drizzle: While the rolls are baking, gently heat the chili honey in a small saucepan or microwave until warm and infused with chili heat, enhancing its flavor and making it perfect for drizzling.
  8. Serve: Allow the rolls to cool slightly after baking. Drizzle generously with the warm chili honey before serving for a delicious sweet and spicy contrast that complements the creamy cheese filling beautifully.

Notes

  • Store leftover rolls in an airtight container in the refrigerator for up to 3 days.
  • For a gluten-free alternative, substitute spring roll wrappers and breadcrumbs with gluten-free versions.
  • Panko breadcrumbs help achieve extra crunchiness; regular breadcrumbs can be used but may result in a softer crust.
  • Adjust the amount of red pepper flakes and chili honey to control the heat level according to your taste preferences.
