Ingredients

Fudge Base

  • 3 cups sugar
  • ¾ cup butter
  • ⅔ cup half and half
  • 12 ounces white chocolate chips
  • 7 ounces marshmallow creme
  • Zest of 1 large lemon, finely grated

Coloring and Decoration

  • 1-2 drops food coloring per bowl (multiple colors as desired)
  • Jimmies, sprinkles, nonpareils or similar decorations

Instructions

  1. Prepare Pan: Line a 9-inch square pan with foil, leaving ends of foil extending over two sides for easy removal. Spray the foil and pan sides with cooking spray and evenly rub with a paper towel. Also spray a small thin-bladed knife or butter knife with cooking spray. Set all aside.
  2. Cook Fudge Mixture: In a saucepan (at least 3 quart) over medium heat, combine sugar, butter, and half and half. Stir constantly until the mixture reaches a full rolling boil (not just bubbling at edges). Continue to cook for exactly 4 minutes, stirring constantly to prevent burning.
  3. Add Chocolate and Marshmallow Creme: Remove from heat and stir in the white chocolate chips, marshmallow creme, and lemon zest. Stir continuously until smooth and fully mixed, which may take several minutes.
  4. Divide and Color: Remove one-quarter of the mixture into a microwave-safe bowl, and another quarter into a separate microwave-safe bowl. Add 1-2 drops of food coloring to each bowl and mix well to create vibrant colors. Leave remaining half of the mixture in the saucepan uncolored.
  5. Layer Fudge: Pour about half of the plain fudge mixture into the prepared pan. Spoon half of each colored mixture randomly over the surface. Add the remaining uncolored fudge mixture on top, followed by the rest of the colored batters in spoonfuls. If batters thicken during handling, microwave for 10-15 seconds to loosen.
  6. Create Swirls: Using the prepared thin-edge knife, gently run back and forth a few times through the fudge to create a swirled, marbled pattern. Avoid over-swizzling to prevent colors from blending together fully.
  7. Decorate: Sprinkle jimmies, sprinkles, or nonpareils in little clusters over the top, mimicking small flower groupings rather than spreading evenly.
  8. Cool and Cut: Allow the fudge to cool completely at room temperature (best not refrigerated for cutting). Use the foil handles to lift fudge from the pan, then cut into 64 one-inch squares and serve.
