This Mixed Berry Granola is a crunchy, flavorful breakfast or snack option packed with hearty oats, almonds, and a blend of freeze-dried berries. Infused with vanilla and sweetened with maple syrup and berry jam, it’s easy to make in under an hour and perfect to top yogurt, ice cream, or enjoy on its own.

Ingredients

Dry Ingredients

  • 1½ cups old fashioned oats
  • 1 teaspoon chia seeds
  • ½ teaspoon Kosher or fine sea salt
  • ¼ teaspoon ground cinnamon
  • ¼ cup sliced almonds
  • 1 cup freeze-dried berries (raspberries, strawberries, and blueberries or any preferred combination)

Wet Ingredients

  • ¼ cup extra virgin olive oil or canola oil
  • ¼ cup maple syrup
  • ¼ cup raspberry or strawberry jam/preserves
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven: Set your oven to 300℉ (150℃) and line a 9 by 13-inch baking sheet with parchment paper or a silicone baking mat to prevent sticking and facilitate easy cleanup.
  2. Mix dry and wet ingredients: In a medium-sized bowl, combine the oats, chia seeds, salt, cinnamon, and sliced almonds. Add the olive or canola oil, maple syrup, jam or preserves, and vanilla extract. Stir thoroughly to ensure every ingredient is evenly coated and the mixture is well combined.
  3. Spread mixture on baking sheet: Pour the granola mixture onto the prepared baking sheet and spread it out evenly in a single layer, making sure the mixture touches so it can clump together during baking.
  4. Bake the granola: Place the baking sheet in the oven and bake for 35 to 45 minutes, until the granola turns golden brown and crispy. Monitor to avoid over-browning.
  5. Cool the granola: Remove the baking sheet from the oven and allow the granola to cool undisturbed on the pan for 15 to 20 minutes. This cooling step helps it harden and develop its crunchy texture.
  6. Add freeze-dried berries: Once the granola is cool to the touch, break it into clusters by hand and gently toss in the freeze-dried berries.
  7. Serve or store: Enjoy immediately as a topping or snack, or store the granola in an airtight container for later use to maintain freshness.
