Ingredients

Ice Cream Base

  • 2 cups heavy cream, cold
  • 1 (14 ounce) can sweetened condensed milk

  • ⅓ cup chopped pistachios, raw and shelled

Instructions

  1. Whip the Cream: Using a stand mixer fitted with the whisk attachment or a handheld electric mixer, beat the cold heavy cream on high speed until stiff peaks form, which means the peaks hold their shape firmly when you lift the beater.
  2. Add Sweetened Condensed Milk: Add the entire can of sweetened condensed milk to the whipped cream and continue beating on medium-high speed until fully combined and smooth.
  3. Incorporate Pistachio Paste: Pour in the pistachio paste and mix on low speed until it is completely integrated into the cream mixture, ensuring even pistachio flavor throughout.
  4. Fold in Chopped Pistachios: Gently fold in the chopped pistachios with a spatula, reserving a small amount to sprinkle on top later for added texture and garnish.
  5. Freeze: Transfer the mixture into a 9×5 inch metal loaf pan or any 8-cup container. Cover tightly with plastic wrap or a lid to prevent freezer burn and freeze for at least 6 hours or overnight until firm.
  6. Serve: Scoop and serve the ice cream directly from the freezer, garnished with the reserved chopped pistachios for extra crunch and presentation.
