A nostalgic Southern dessert made with layers of creamy homemade vanilla pudding, ripe bananas, and vanilla wafers, topped with whipped cream or meringue. Comforting, classic, and irresistibly delicious.

Ingredients

  • 3 cups whole milk
  • 3/4 cup granulated sugar
  • 1/4 cup all-purpose flour or cornstarch
  • 1/4 teaspoon salt
  • 4 large egg yolks
  • 2 tablespoons unsalted butter
  • 2 teaspoons vanilla extract
  • 4 ripe bananas, sliced
  • 1 box vanilla wafers
  • Whipped cream or meringue, for topping

Instructions

  1. In a medium saucepan, whisk together sugar, flour (or cornstarch), and salt.
  2. Gradually whisk in the milk and place over medium heat, stirring constantly until the mixture thickens and begins to bubble.
  3. In a separate bowl, lightly beat the egg yolks. Slowly pour some of the hot milk mixture into the yolks, whisking constantly to temper them.
  4. Return the egg mixture to the saucepan and cook for 2 more minutes, stirring constantly until thick and smooth.
  5. Remove from heat and stir in butter and vanilla extract until fully combined and glossy.
  6. In a large serving dish, layer vanilla wafers, banana slices, and warm pudding. Repeat the layers until all ingredients are used.
  7. Finish with a final layer of pudding and top with whipped cream or meringue.
  8. Refrigerate for at least 2–3 hours before serving to allow the flavors to meld and the pudding to set.

Notes

  • Toss banana slices in lemon juice to prevent browning.
  • Add cinnamon or nutmeg for a warm spice flavor.
  • Use shortbread or graham crackers as a variation on the wafers.
  • Layer in mason jars for individual servings.
  • Best enjoyed within 3 days; not suitable for freezing.
