Ingredients

Batter and Cobbler

  • 1 stick (8 tablespoons) salted butter, cubed
  • 1 cup all-purpose flour
  • 1 cup light or dark brown sugar, divided
  • 2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon kosher salt
  • 1 cup milk
  • 1 tablespoon vanilla extract
  • 5-6 peaches, cut into 8 wedges
  • 2 tablespoons maple syrup

Maple Butter

  • 4 tablespoons salted butter
  • 1/4 cup maple syrup

Instructions

  1. Preheat and Melt Butter: Preheat your oven to 375°F (190°C). Place the cubed butter in a 9×13 inch baking dish and put the dish in the oven to melt the butter, about 10 minutes.
  2. Make the Batter: In a mixing bowl, combine the flour, 3/4 cup of the brown sugar, baking powder, cinnamon, and kosher salt. Add the milk and vanilla extract, stirring gently until just combined to form a smooth batter.
  3. Prepare Peaches: Toss the peach wedges with the remaining 1/4 cup brown sugar and 2 tablespoons maple syrup until evenly coated.
  4. Assemble the Cobbler: Remove the baking dish from the oven. Layer half of the peaches evenly over the melted butter. Pour the batter over the peaches carefully without stirring. Then layer the remaining peaches over the top of the batter.
  5. Bake: Place the baking dish back in the oven and bake for 50-55 minutes, or until the center is set and the edges begin to turn golden brown.
  6. Prepare Maple Butter: While the cobbler bakes, combine 4 tablespoons of salted butter and 1/4 cup maple syrup in a small pan. Bring to a boil and cook for 2 minutes, then remove from heat.
  7. Serve: Serve the cobbler warm or at room temperature, topped with a drizzle of the warm maple butter and optionally with ice cream.
