  • 1 tsp dried oregano
  • Salt and pepper, to taste

  • Grated Parmesan cheese, for serving
  • Fresh basil leaves, for garnish

Instructions

  1. Sauté Onion: In a large pot, heat a splash of olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes, stirring occasionally to prevent burning.
  2. Add Garlic: Add the minced garlic to the pot and cook for an additional 1-2 minutes until fragrant, being careful not to let it burn.
  3. Add Tomatoes & Broth: Pour in the crushed tomatoes and vegetable broth, stirring well to combine all the flavors in the pot.
  4. Cook Pasta: Add the uncooked pasta along with dried basil, dried oregano, salt, and pepper. Bring the mixture to a boil, then reduce heat to a simmer. Cover the pot and cook for about 10-12 minutes until the pasta is tender and has absorbed the flavors.
  5. Stir in Cream: Once the pasta is cooked, stir in the heavy cream. Let the mixture simmer gently for another 2-3 minutes until the sauce has thickened to a creamy consistency.
  6. Serve: Dish the creamy tomato pasta into bowls. Top with grated Parmesan cheese and garnish with fresh basil leaves for added flavor and presentation.
