This One Pot Lemon Herb Chicken & Rice is a flavorful and easy weeknight dinner, featuring tender chicken breasts cooked in a buttery lemon herb sauce with fluffy rice, all made conveniently in a single pan in just 30 minutes.

Ingredients

Chicken

  • 4 boneless skinless chicken breasts
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 2 teaspoons Italian seasoning

Rice

  • 1 cup uncooked white rice
  • 2 ¼ cups low sodium chicken broth
  • Juice of 1 lemon
  • 1 teaspoon Italian seasoning

Instructions

  1. Brown the chicken: Melt the butter over medium heat in a large skillet or pan with a lid. Season the chicken breasts with salt, pepper, and 2 teaspoons Italian seasoning. Brown each chicken breast for 1-2 minutes per side, ensuring the outside is seared but the chicken is not cooked through. Remove chicken from the pan and set aside on a plate.
  2. Cook the rice: Without cleaning the pan, add the uncooked rice, chicken broth, lemon juice, and 1 teaspoon Italian seasoning to the skillet. Stir to combine.
  3. Simmer chicken and rice: Place the browned chicken breasts on top of the rice mixture. Cover the pan with a lid and simmer over medium-low heat for 20-25 minutes, or until the rice is cooked and the liquid has been absorbed.
  4. Finish and serve: Garnish with freshly chopped parsley or cilantro and lemon wedges for squeezing over the dish. Serve immediately while hot.

Notes

  • For bone-in, skin-on chicken breasts, increase browning time to 3-4 minutes per side before simmering, and ensure chicken reaches 165°F internal temperature before serving.
  • If using brown rice, increase cooking time to 30-35 minutes and check for doneness at 30 minutes.
  • Optional add-ins include a can of fire-roasted tomatoes, ½ cup frozen peas or carrots, 1 teaspoon red pepper flakes, or half a finely chopped onion caramelized in butter before adding chicken.
