Ingredients

Bread

  • 4 to 6 thick cut slices rustic bread

Cheese

  • 5 ounces Brie or Camembert cheese, cut into slices

  • 1 pound tomatoes

  • Fresh ground black pepper

Instructions

  1. Prepare the Broiler: Move an oven rack to about 8 inches from the broiler element and turn the broiler to high to preheat.
  2. Prep the Tomatoes: Remove the core from the tomatoes and slice them evenly. Lightly season the tomato slices with salt to enhance their natural flavor.
  3. Toast the Bread: Arrange the slices of rustic bread on a baking sheet. Place the baking sheet under the broiler and toast the bread slices until they become lightly golden brown.
  4. Broil with Cheese: Flip the toasted bread slices over. Top each slice with the Brie cheese slices and drizzle with a bit of extra-virgin olive oil. Return to the broiler and cook until the cheese melts and becomes slightly bubbly.
