Ingredients

Sweet Potatoes

  • 2 pounds purple “stokes” sweet potatoes (roughly 2 large)

Wet Ingredients

  • 1/2 cup milk (cow’s milk or unsweetened, unflavoured dairy-free alternative, or cream)
  • 1/4 cup butter (regular, unsalted or dairy-free alternative)

Spices & Seasonings

  • 1/4 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/2 tsp garlic powder
  • Salt, to taste

Fresh Herbs

  • 2 Tbsp chopped parsley
  • 2 Tbsp chopped green onion

Instructions

  1. Prep Potatoes: Peel and wash the purple sweet potatoes thoroughly. Then cut them into roughly 1-inch thick cubes to ensure even cooking.
  2. Boil Potatoes: Place the cubed sweet potatoes into a large pot and cover with water completely. Cover the pot with a lid, bring the water to a boil over high heat, then reduce heat to low and let simmer, covered, for about 15 minutes, or until the potatoes are easily pierced with a fork.
  3. Drain Water: Once cooked, turn off the heat and carefully drain all the water from the sweet potatoes.
  4. Mash and Season: Add the milk, butter, cinnamon, nutmeg, garlic powder, and salt directly to the drained sweet potatoes. Mash thoroughly with a potato masher until you reach the desired texture, adding more milk or butter if you prefer a creamier, thinner consistency.
  5. Add Herbs and Serve: Stir in the chopped parsley and green onion evenly throughout the mash. Serve the mashed purple sweet potatoes hot as a vibrant side dish.
