These Quick & Easy Mint Chocolate Energy Balls are a delicious, no-bake treat combining the refreshing flavors of peppermint and dark chocolate with naturally sweet Medjool dates and almond flour. Soft, chewy, and perfectly portioned, they make a healthy festive snack or energy-boosting bite. Made without baking, they come together quickly in a food processor and can be frozen for convenient, long-lasting enjoyment.

Ingredients

  • 1 cup Medjool dates, pitted (approx 10 dates)
  • 3/4 cup almond flour
  • 1/2 cup desiccated coconut
  • 3 Tbsp raw cacao powder
  • 1 tsp peppermint extract (food grade)
  • 1/2 tsp vanilla extract
  • 2 Tbsp water
  • Pinch of sea salt

Optional Toppings

  • Mini chocolate chips
  • Extra desiccated coconut

Instructions

  1. Prep: Line a small baking sheet with parchment paper to prepare a clean surface for the energy balls to rest and firm up.
  2. Combine: Place all the main ingredients except the optional toppings into a large food processor. Pulse the mixture until it starts to stick together and forms a large, cohesive mass.
  3. Roll: Scoop about one tablespoon of the mixture and roll it between your palms to form a smooth ball.
  4. Optional Toppings: If desired, add mini chocolate chips or extra desiccated coconut to a small dish. Roll each ball gently in the topping to coat evenly. Alternatively, leave the balls plain.
  5. Freeze: Arrange the rolled balls on the lined baking sheet, spacing them evenly. Place the tray in the freezer for one hour to allow the balls to firm up.
