Ingredients

Salad

  • 3 cups cooked chickpeas, drained and rinsed

  • ½ cup kalamata olives, pitted and halved
  • ½ cup chopped fresh parsley
  • ¼ cup chopped fresh dill
  • ¼ cup chopped fresh mint, plus whole mint leaves for garnish

Instructions

  1. Make the dressing: In a large bowl, whisk together the extra-virgin olive oil, fresh lemon juice, grated garlic, Dijon mustard, sea salt, and several grinds of freshly ground black pepper until fully combined and emulsified.
  2. Combine salad ingredients: Add the cooked, drained, and rinsed chickpeas, halved grape tomatoes, diced cucumber, pickled red onions, and halved kalamata olives to the bowl with the dressing. Toss gently to coat all ingredients evenly.
  3. Add herbs and toss: Incorporate the chopped fresh parsley, dill, and mint into the salad. Toss again to distribute the herbs throughout the mixture thoroughly.
