Enjoy a comforting and elegant breakfast with these delightful baked French eggs. Creamy eggs baked with rich cheese and fresh herbs create a warm, flavorful dish perfect for starting your day or serving brunch guests.

Ingredients

Eggs & Dairy

  • 4 large eggs
  • 1 cup heavy cream
  • 1/2 cup grated cheese (Gruyère or cheddar works wonderfully)
  • Butter for greasing

Herbs & Seasoning

  • 1/4 cup chopped fresh herbs (like parsley or chives)
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven: Preheat your oven to 375°F (190°C) to ensure it is at the right temperature for even baking.
  2. Prepare the dish: Grease a baking dish generously with butter to prevent sticking and add richness to the eggs.
  3. Mix cream and seasoning: In a bowl, whisk together the heavy cream, salt, and pepper. Optionally stir in some of the chopped fresh herbs to infuse flavor throughout the custard base.
  4. Assemble the eggs: Pour the cream mixture into the greased baking dish. Carefully crack the eggs over the cream, spacing them evenly. Then sprinkle the grated cheese and the remaining fresh herbs over the top.
  5. Bake the eggs: Place the dish in the preheated oven and bake for about 20 minutes, or until the eggs are set but still creamy in the yolks and the cheese is melted and lightly golden.
  6. Serve warm: Remove from the oven and let the baked eggs rest for a minute or two. Serve warm directly from the dish for a comforting and delightful breakfast option.

Notes

  • Use Gruyère cheese for a classic French flavor or cheddar for a sharper taste.
  • Fresh herbs like parsley, chives, or tarragon work wonderfully; feel free to mix herbs to your liking.
  • Check the eggs around the 18-minute mark to avoid overcooking; yolks should remain slightly runny if preferred.
  • Serve with toasted bread or a light green salad for a complete meal.
