Instructions

  1. Preheat the oven: Set your oven to 200°C (400°F) to get it ready for roasting the vegetables.
  2. Prepare the vegetables: Cut large radishes in half, leaving smaller radishes whole. Trim the woody ends off the asparagus, and remove any root ends from the spring onions for a clean bite.
  3. Arrange and roast: Spread the radishes, asparagus, and spring onions evenly on a baking sheet in a single layer. Drizzle with 1 tablespoon of oil and roast in the oven for 15 minutes or until the vegetables begin to darken and become tender.
  4. Make the dressing: While the vegetables roast, combine 2 tablespoons oil, maple syrup, Dijon mustard, salt, and pepper in a jar or bowl. Shake or whisk until the dressing is smooth and emulsified.
