This classic German Apple Cake is a moist, flavorful dessert featuring diced apples folded into a thick, spiced batter. With a subtle cinnamon kick and a tender crumb, this cake is perfect for autumn gatherings or any cozy occasion. It combines simple pantry staples and fresh apples to create a comforting treat that bakes to golden perfection with a soft, tender inside and lightly crisp edges.

Ingredients

Cake Batter

  • 1 cup vegetable oil
  • 2 large eggs
  • 2 cups white sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • ½ teaspoon salt

Fruit

  • 4 cups apples, peeled, cored, and diced (preferably tart, firm apples like Granny Smith or Honeycrisp)

Instructions

  1. Prepare the Oven and Pan: Preheat your oven to 350 degrees F (175 degrees C). Grease and lightly flour a 9×13-inch cake pan to prevent sticking.
  2. Mix Wet Ingredients: In a large bowl, beat together the vegetable oil and eggs using an electric mixer until the mixture is creamy. Then add the sugar and vanilla extract, beating until well combined and smooth.
  3. Sift Dry Ingredients: In a separate medium bowl, sift together the all-purpose flour, ground cinnamon, baking soda, and salt to evenly distribute the leavening agents and spices.
  4. Combine Batter: Gradually add the dry flour mixture into the wet oil-egg mixture while stirring gently until just combined. The batter will be very thick, so be careful not to overmix.
  5. Fold in Apples: Using a wooden spoon or spatula, gently fold the peeled, cored, and diced apples into the batter until evenly distributed.
  6. Fill Pan and Bake: Spread the batter evenly into the prepared 9×13-inch cake pan. Place the pan in the preheated oven and bake for approximately 45 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool and Serve: Once baked, remove the cake from the oven and allow it to cool on a wire rack before slicing and serving.

Notes

  • Use tart, firm apples like Granny Smith or Honeycrisp if you want the apples to keep their shape.
  • Softer apples like Golden Delicious will make the cake moister.
  • For added texture, sprinkle sliced almonds on top of the batter before baking.
