Ingredients

Crust

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted

Cheesecake Filling

  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • ½ cup sour cream

Toppings

  • 1 cup salted caramel sauce
  • ½ cup chocolate chips
  • Sea salt, for sprinkling

Instructions

  1. Preheat Oven: Preheat your oven to 325°F (160°C) to prepare for baking the bars uniformly.
  2. Prepare Crust: In a bowl, combine graham cracker crumbs and melted butter until evenly mixed. Press this mixture firmly into the bottom of a greased 9×13-inch baking pan to form the crust.
  3. Make Cheesecake Filling: Beat the softened cream cheese until smooth with an electric mixer. Add the granulated sugar and vanilla extract, and continue mixing. Incorporate the eggs one at a time, then mix in the sour cream until the filling is smooth and well combined.
  4. Assemble Bars: Pour the cheesecake filling over the prepared crust, spreading it evenly. Drizzle half of the salted caramel sauce over the filling and use a knife to swirl it gently into the cheesecake layer.
  5. Bake: Bake in the preheated oven for about 30 minutes, or until the edges are set but the center still has a slight jiggle.
  6. Cool and Chill: Allow the bars to cool on a wire rack for 30 minutes. Then, transfer to the refrigerator and chill for at least 2 hours to set completely.
  7. Finish and Serve: Before serving, drizzle the remaining caramel sauce over the chilled bars. Sprinkle chocolate chips evenly on top and finish with a light sprinkle of sea salt for enhanced flavor contrast.
