Sheet Pan Chicken Primavera is a vibrant and wholesome one-pan meal featuring sweet Italian chicken sausage and a colorful medley of fresh vegetables, all roasted to perfection with Italian seasoning and topped with melted mozzarella and parmesan cheeses. This easy-to-make dish combines savory sausage, tender-crisp veggies, and a hint of balsamic glaze for a flavorful and satisfying dinner that can be served on its own or over pasta or greens.

Ingredients

Protein & Produce

  • 1 12 oz package sweet Italian chicken sausage
  • 2 zucchinis, halved lengthwise and thinly sliced into half-moons
  • 2 medium tomatoes, halved and thinly sliced into half-moons
  • 2 bell peppers (1 red, 1 yellow), thinly sliced
  • 2 large carrots, cut into thin matchsticks
  • 1/2 red onion, thinly sliced
  • 2 cloves garlic, minced
  • Freshly chopped basil, about 1/2 cup for garnish

Seasonings & Oils

  • 2 tbsp extra-virgin olive oil
  • 1 1/2 tbsp Italian seasoning
  • Juice from half a lemon
  • 3/4 tsp kosher salt
  • 1/2 tsp freshly ground black pepper

Cheese & Toppings

  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup shredded parmesan cheese
  • Balsamic glaze (premade), for drizzling

Instructions

  1. Preparation: Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking and for easy cleanup.
  2. Slice Ingredients: Slice the chicken sausage into 1-inch rounds. Halve zucchinis lengthwise and slice into half-moons. Halve the tomatoes and slice them into half-moons as well. Thinly slice the bell peppers, red onion, and carrots into matchstick-sized pieces to ensure even and quick cooking.
  3. Combine and Season: Place all the sliced sausage and vegetables onto the prepared baking sheet. Drizzle with 2 tablespoons of extra-virgin olive oil, sprinkle the Italian seasoning, add the juice of half a lemon, minced garlic, kosher salt, and ground black pepper. Gently toss everything together to coat evenly, then spread the mixture out in an even layer.
  4. Roast: Place the baking sheet on the center oven rack and roast for 15 minutes. Then, move the sheet to the top rack and roast for an additional 5 minutes to help the vegetables caramelize and the sausage cook through.
  5. Add Cheese and Broil: Remove the baking sheet from the oven and sprinkle the shredded mozzarella and parmesan cheese evenly over the top. Place back in the oven on the broil setting and broil for 3–4 minutes or until the cheese is bubbly and golden brown, watching closely to prevent burning.
  6. Garnish and Serve: Remove from the oven, garnish with freshly chopped basil, and drizzle with balsamic glaze before serving. Enjoy the dish on its own, or serve over chickpea pasta or a bed of fresh arugula as desired.
