Ingredients

Spicy Peanut Dipping Sauce

  • ¼ cup creamy peanut butter
  • ¼ cup water
  • 1 tablespoon sriracha
  • 1 tablespoon soy sauce
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon fresh ginger, grated
  • 2 garlic cloves, grated

Wraps

  • 1 pound small/medium shrimp, peeled and deveined
  • Kosher salt, to taste
  • Black pepper, to taste
  • 8 leaves butter lettuce
  • 2 tablespoons olive oil, divided
  • 4 scallions, ends trimmed and thinly sliced
  • 1 medium red bell pepper, chopped
  • ½ cup carrots, chopped
  • Fresh cilantro for garnish

Instructions

  1. Prepare the peanut sauce: Whisk together creamy peanut butter, water, sriracha, soy sauce, toasted sesame oil, freshly grated ginger, and grated garlic in a bowl until smooth. Adjust the consistency by adding more water if needed, then set aside.
  2. Season the shrimp: Pat the shrimp dry using a paper towel, then season both sides with kosher salt and black pepper. Arrange the butter lettuce leaves on a serving platter to prepare for assembly.
  3. Cook the shrimp: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned shrimp and cook for approximately 2 minutes on each side, or until they turn pink and are cooked through. Transfer the shrimp to a plate and set aside.
  4. Sauté the vegetables: In the same skillet, heat the remaining tablespoon of olive oil. Add the sliced scallions, chopped red bell pepper, and chopped carrots. Cook the vegetables for about 3 minutes until they are slightly softened but still maintain a crisp texture.
  5. Combine shrimp and veggies: Return the cooked shrimp to the skillet with the vegetables and cook together for another minute or until everything is heated through.
  6. Assemble the wraps: Spoon the shrimp and vegetable mixture evenly onto the butter lettuce leaves. Garnish each wrap with fresh cilantro and serve immediately with the prepared spicy peanut dipping sauce on the side.

Notes

  • Make ahead: You can prepare the shrimp and vegetable filling 3 to 4 days in advance and store it in the refrigerator. The peanut dipping sauce will keep well for up to a week when stored properly.
