A refreshing and simple celery apple salad featuring crunchy celery, juicy honeycrisp apples, and freshly shaved gruyere cheese, all tossed in a bright lemon vinaigrette dressing. This easy-to-make salad is perfect as a light side dish and delivers a delightful balance of crisp textures and tangy flavors.

Ingredients

Salad

  • 1 large bunch celery
  • 2 medium apples (Honeycrisp recommended)
  • 1/2 cup gruyere cheese, shaved
  • Salt, to taste
  • Black pepper, to taste

Lemon Vinaigrette Dressing

  • 1/4 cup olive oil
  • Juice of 1 lemon
  • 1 tablespoon white wine vinegar
  • 1 teaspoon maple syrup
  • 1/2 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Lemon Vinaigrette: In a small bowl or jar with a lid, combine the olive oil, lemon juice, white wine vinegar, maple syrup, Dijon mustard, garlic powder, salt, and pepper. Whisk or shake vigorously until the ingredients are fully emulsified. Set aside.
  2. Prep the Celery: Trim off any brown or damaged ends from the celery stalks. Cut the celery into thin, bite-sized pieces. If the celery leaves are fresh and green, chop them finely to use as garnish and reduce waste.
  3. Shave the Gruyere: Using a vegetable peeler, shave thin slices from a block of gruyere cheese until you have about half a cup of delicate cheese ribbons.
  4. Slice the Apples: Core the apples and slice them thinly. Then cut the slices into small, bite-sized pieces to match the celery in size for a balanced texture.
  5. Assemble the Salad: In a large salad bowl, combine the chopped celery, apple pieces, shaved gruyere cheese, and celery leaves (if using). Whisk the lemon vinaigrette one more time and pour it over the salad.
  6. Toss and Season: Gently toss the salad to coat all ingredients evenly with the dressing. Taste and adjust with additional salt and pepper if needed.
  7. Serve Immediately: This salad is best enjoyed fresh, immediately after tossing, to maintain its crisp and refreshing qualities.

Notes

  • Use fresh, crisp honeycrisp apples for the best balance of sweetness and tartness.
  • Gruyere can be substituted with another semi-hard cheese like gouda or emmental if preferred.
  • The salad is best served immediately; the apples and celery may lose their crispness if left to sit too long.
  • For a vegan version, omit the cheese or use a plant-based cheese alternative.
  • The celery leaves add a nice herbaceous note and help reduce waste, so consider including them if they look fresh.
