A refreshing and simple summer salad combining juicy watermelon, crisp cucumber, tangy feta cheese, and fresh mint, all zested and brightened with lime juice. Perfect for a light side dish or a healthy snack on warm days.

Ingredients

Salad Ingredients

  • 6 cups watermelon, seeded and cubed
  • 1 English cucumber, chopped
  • 6 oz feta cheese, cubed
  • Handful of chopped fresh mint leaves
  • 1 fresh lime, zest and juice
  • Sea salt flakes, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Combine Ingredients: Add your cubed watermelon, chopped cucumber, cubed feta cheese, and chopped fresh mint leaves into a large serving bowl.
  2. Add Lime and Seasoning: Zest and juice one fresh lime, then pour it over the combined ingredients. Sprinkle with sea salt flakes and freshly ground black pepper to taste.
  3. Toss Gently: Very gently toss the salad to mix all the flavors together without breaking up the fruit or cheese cubes.
  4. Taste and Adjust: Taste the salad and adjust seasoning with more salt, pepper, or lime juice as desired for a perfect balance of flavors.
  5. Serve: Serve the salad immediately as a refreshing side or chilled snack and enjoy!

Notes

  • Use a ripe, seedless watermelon for the best sweetness and texture.
  • English cucumber is preferred for its mild flavor and thin skin; peel if desired.
  • Fresh mint leaves add a cooling herbal note but can be omitted if unavailable.
  • Adjust lime juice and seasoning according to taste preferences.
  • This salad is best served fresh but can be stored in the refrigerator for up to 2 hours before serving.
