Ingredients

Vegetables and Meat

  • 1 Tbsp. olive oil
  • 1/2 white onion, diced
  • 1 cup white mushrooms, chopped (about 5-6 mushrooms)
  • 1 red bell pepper, diced
  • 1 lb. ground turkey
  • 2 cloves garlic, minced

Seasonings

  • 1 tsp. Italian seasoning
  • 1 tsp. salt
  • 1/2 tsp. black pepper

Liquids and Pasta

  • 24 oz. red pasta sauce
  • 1/2 cup chicken broth (or water)
  • 2 cups rotini, dry

Cheeses and Herbs

  • 1 1/2 cups mozzarella cheese, freshly shredded
  • 1/2 cup Parmesan cheese, freshly grated
  • 1 cup ricotta cheese
  • 1 Tbsp. fresh parsley, minced
  • 1 Tbsp. fresh basil, minced

Instructions

  1. Heat and Sauté Vegetables and Meat: Heat olive oil in a large skillet over medium-high heat. Add diced onion, chopped mushrooms, diced red bell pepper, ground turkey, minced garlic, and season with Italian seasoning, salt, and pepper. Cook, stirring occasionally, until the ground turkey is no longer pink, about 5-7 minutes. Drain any excess liquid or grease from the pan and return it to the heat.
  2. Add Sauce, Broth, and Pasta: Pour in the red pasta sauce, chicken broth (or water), and dry rotini pasta. Stir to combine all ingredients well. Bring the mixture to a boil, then cover, reduce heat to a simmer, and cook for 10-15 minutes or until the pasta is tender and cooked through.
  3. Incorporate Cheeses: Stir in the shredded mozzarella and grated Parmesan cheeses into the skillet mixture. Taste and adjust seasoning with extra salt and black pepper if needed. Turn off the heat to prevent overcooking the cheese.
  4. Prepare Ricotta Herb Mixture: In a small bowl, combine the ricotta cheese with minced fresh parsley and basil. Mix well to create a flavorful herb ricotta topping.
