Ingredients

Chicken & Marinade

  • 1 pound boneless, skinless chicken breasts, cut into pieces
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Main Ingredients

  • 2 cups cooked rice (white or brown)
  • 1 tablespoon olive oil
  • 1 cup corn (fresh or frozen)
  • 1 bell pepper, diced
  • 1 cup black beans, drained and rinsed
  • 1 avocado, sliced

Garnish & Serving

  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Marinate the Chicken: Wash and dry the chicken breasts, then cut them into bite-sized pieces. In a bowl, combine the chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Toss the chicken pieces in the spice mixture and let them marinate for 30 minutes to absorb all the flavors.
  2. Prepare the Rice: Cook the rice according to the package instructions. For extra flavor, you can cook the rice in chicken broth instead of water. Set aside once done.
  3. Cook the Chicken: Heat the olive oil in a large skillet over medium heat. Add the marinated chicken pieces and cook, stirring occasionally, until the chicken is cooked through and no longer pink inside, about 6-8 minutes.
  4. Sauté Vegetables: Add the diced bell pepper and corn to the skillet with the chicken. Sauté for 4-5 minutes until the vegetables are tender but still vibrant.
  5. Add Black Beans: Fold in the drained and rinsed black beans. Cook for an additional 2 minutes until heated through, stirring gently to combine all ingredients well.
  6. Assemble the Bowls: Divide the cooked rice into serving bowls. Top with the chicken and vegetable mixture. Garnish with sliced avocado and fresh cilantro. Serve with lime wedges on the side to squeeze over just before eating for a refreshing citrus zing.

Notes

  • Marinating the chicken for longer than 30 minutes will deepen the flavor even further.
  • Cooking rice in chicken broth instead of water boosts the overall savory taste of the dish.
  • Use fresh corn when in season for the best texture and sweetness, but frozen corn works well too.
  • To make this meal spicier, feel free to add a pinch of cayenne pepper or serve with hot sauce on the side.
