These hoagies feature crispy toasted rolls and tangy pickle slices, delivering a satisfying heat-packed meal perfect for lunch or dinner.

Ingredients

For the Chicken

  • 2 pounds chicken breast, thinly sliced
  • 2 tablespoons oil, divided
  • ¼ cup hot chicken seasoning or Nashville-style spice blend

For the Spicy Mayo

  • ½ cup mayonnaise
  • 1 tablespoon pickle brine
  • 1 tablespoon chopped chipotles (optional for extra heat)
  • 1 to 2 teaspoons of the seasoning blend (from above)

For Assembly

  • 2 hoagie rolls
  • 4 slices pepper jack cheese
  • Pickle slices for topping

Instructions

  1. Season the Chicken: Place the thinly sliced chicken breast in a bowl. Add one tablespoon of oil and about two tablespoons of the hot chicken seasoning or Nashville-style spice blend. Mix thoroughly to coat every piece evenly. For deeper flavor, cover and refrigerate for a few hours or overnight.
  2. Make the Spicy Mayo: In a small bowl, combine the mayonnaise, pickle brine, chopped chipotles (if using), and one to two teaspoons of the seasoning blend. Stir well until the mixture is smooth and creamy. Taste and adjust the seasoning if desired. Set aside.
  3. Toast the Rolls: Heat a griddle or large skillet over medium heat. Spread a thin layer of the spicy mayo on the cut sides of the hoagie rolls. Place the rolls cut-side down on the hot surface and toast until golden brown and slightly crispy. Remove from heat and set aside.
  4. Cook the Chicken: Add the remaining tablespoon of oil to the hot griddle. Spread the seasoned chicken slices in a single layer. Let them sear without stirring for about 3 minutes to develop a nice crust. Flip the chicken and cook until it reaches an internal temperature of approximately 160°F and is almost cooked through.
  5. Add Cheese and Finish: Top the nearly cooked chicken with the slices of pepper jack cheese. Lower the heat slightly and let the cheese melt. Gently mix and chop the chicken with a spatula until the cheese is fully melted and evenly coats the chicken pieces.
  6. Assemble the Hoagies: Spread additional spicy mayo inside each toasted roll. Spoon the cheesy chicken mixture onto the rolls, piling it high. Top with pickle slices and sprinkle a little extra seasoning if desired.
  7. Serve: Serve the sandwiches hot with your choice of fries, coleslaw, or a simple salad on the side for a complete meal experience.

Notes

  • For more intense heat, increase the amount of chipotles in the spicy mayo or add extra seasoning blend to the chicken.
  • Marinating the chicken overnight enhances flavor and tenderness but can be skipped if short on time.
  • Use a meat thermometer to ensure chicken is cooked safely to 160°F.
  • Optional toppings like sliced onions or lettuce can add extra crunch and freshness.
  • To make this recipe gluten free, substitute the hoagie rolls with gluten-free bread or rolls.
