Ingredients

Bread Ingredients:

  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ¼ cup unsalted butter, softened
  • ¾ cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup milk
  • 1 ½ cups strawberries, finely chopped (about 8-10 strawberries)

Glaze Ingredients:

  • 2 cups powdered sugar
  • 2 Tablespoons melted butter
  • ⅓ cup strawberries, finely chopped (about 3-4 strawberries)
  • ½ teaspoon vanilla or almond extract
  • 1-2 Tablespoons heavy cream or milk

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to prepare for baking the bread.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set this mixture aside.
  3. Cream Butter and Sugar: In a large mixing bowl, beat together the softened unsalted butter and sugar until the mixture is fluffy and light. This usually takes a few minutes with an electric mixer.
  4. Add Egg and Vanilla: Incorporate the large egg and vanilla extract into the butter-sugar mixture and continue mixing on medium speed for an additional minute to ensure everything is well combined.
  5. Incorporate Milk and Flour: Add the milk and half of the flour mixture to the wet ingredients. Mix for about 30 seconds. Then add the remaining flour mixture. Scrape down the sides of the bowl intermittently to make sure all ingredients are fully combined.
  6. Fold in Strawberries: The batter will be thick, almost dough-like. Gently stir in the finely chopped strawberries, which will slightly loosen the batter and distribute fruit evenly.
  7. Prepare Pan and Bake: Pour the batter into a lightly sprayed or floured bread loaf pan. Place it in the oven and bake for about 50 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool Bread: Remove the bread from the oven and allow it to cool completely before applying the glaze.
  9. Prepare Strawberry Glaze: In a medium bowl, whisk together the powdered sugar, melted butter, vanilla or almond extract, and 1 tablespoon of heavy cream or milk until smooth. Stir in the finely chopped strawberries until incorporated. If you prefer a thicker glaze, add additional powdered sugar ¼ cup at a time until desired consistency is achieved.
  10. Glaze the Bread: Once the bread has cooled, spread the strawberry glaze evenly over the top for a delicious finishing touch.
