Ingredients

For the Tart Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 teaspoon salt
  • 1 large egg yolk
  • 23 tablespoons ice water

For the Mascarpone Filling:

  • 8 ounces mascarpone cheese, softened
  • 1/2 cup heavy cream
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon (optional)

For the Topping:

  • 2 cups fresh strawberries, hulled and sliced
  • 2 tablespoons apricot preserves (for glaze, optional)
  • Mint leaves (for garnish, optional)

Instructions

  1. Prepare the Tart Crust: Preheat your oven to 350°F (175°C). In a food processor, combine the flour, powdered sugar, and salt, pulsing to mix. Add the cold, cubed butter and pulse until the mixture resembles coarse crumbs. Add the egg yolk and ice water, one tablespoon at a time, pulsing until the dough just comes together. Press the dough evenly into a 9-inch tart pan, covering the bottom and sides, then prick the bottom with a fork to prevent bubbles. Bake for 15–20 minutes or until lightly golden. Remove and let cool completely.
  2. Prepare the Mascarpone Filling: In a large bowl, whip the heavy cream until soft peaks form. In another bowl, combine the mascarpone cheese, granulated sugar, vanilla extract, and lemon zest if using, mixing until smooth. Gently fold the whipped cream into the mascarpone mixture until fully combined and smooth.
  3. Assemble the Tart: Once the tart crust is cooled, spread the mascarpone filling evenly over it. Arrange the sliced strawberries decoratively on top of the filling.
  4. Glaze (Optional): If desired, warm the apricot preserves gently in a small saucepan over low heat until melted. Using a brush, glaze the strawberries with the melted preserves for a glossy finish.
  5. Chill and Serve: Refrigerate the assembled tart for at least 1 hour to allow the filling to set. Before serving, garnish with fresh mint leaves if desired. Slice and enjoy your strawberry mascarpone tart.
