This warm strawberry vanilla crisp features a luscious mix of fresh strawberries with a rich vanilla flavor, topped with a buttery brown sugar oat streusel. Perfect for any season, this dessert is easy to make and pairs wonderfully with vanilla ice cream.

Ingredients

Filling

  • 6 cups (1080g) chopped strawberries
  • 1/3 cup (41g) all-purpose flour
  • 1/2 cup (100g) granulated sugar
  • 1 and 1/2 teaspoons pure vanilla extract
  • Seeds scraped from 1/2 vanilla bean

Streusel Topping

  • 2/3 cup (84g) all-purpose flour (spooned and leveled)
  • 2/3 cup (133g) packed light or dark brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 6 tablespoons (85g) unsalted butter, cold and cubed
  • 2/3 cup (57g) old-fashioned whole rolled oats or quick oats
  • Optional: 1/3 cup (35g) sliced almonds

Instructions

  1. Preheat and prepare dish: Preheat your oven to 350°F (177°C). Lightly grease a 9-inch baking dish that holds about 2 quarts. Set aside for later use.
  2. Make the filling: In a large bowl, combine chopped strawberries, all-purpose flour, granulated sugar, pure vanilla extract, and vanilla bean seeds. Gently toss the mixture until all ingredients are evenly combined. Spoon and spread this strawberry filling evenly into the prepared baking dish.
  3. Prepare the streusel topping: In another bowl, whisk together the flour, brown sugar, cinnamon, and salt. Use a pastry cutter or fork to cut in the cold cubed butter until the mixture becomes super crumbly. Stir in the rolled oats thoroughly. Sprinkle this topping evenly over the strawberry filling. If desired, top with sliced almonds for extra texture and flavor.
  4. Bake: Place the baking dish in the oven and bake for 40 to 45 minutes. Bake until the topping is golden brown and the strawberry juices are bubbling around the edges of the dish.
  5. Cool and serve: Remove the crisp from the oven and set it on a wire rack to cool for about 5 minutes. Serve warm with a scoop of vanilla ice cream, or enjoy it at room temperature or cold.
  6. Store leftovers: Cover any leftover crisp and store in the refrigerator for up to 5 days.

Notes

  • The topping may seem like a lot before baking, but it will cook down nicely.
  • Use either old-fashioned rolled oats or quick oats based on your preference; either works well in the topping.
  • The dessert can be served warm, at room temperature, or cold depending on your preference.
  • Adding sliced almonds on top is optional but adds a lovely crunch and flavor.
  • For best results, use fresh strawberries and pure vanilla extract along with real vanilla bean seeds.
