  • 1/4 tsp freshly cracked pepper

Instructions

  1. Prepare the cucumbers: Lay the cucumber slices in a single layer on paper towels, then place another layer of paper towels on top. Press gently into the cucumbers to absorb excess moisture. Leave them under the paper towels while you prepare the other ingredients to prevent sogginess in the salad.
  2. Make the dressing: In a medium bowl, combine the plain Greek yogurt, mayonnaise, finely minced garlic, lime juice and zest, chili powder, paprika, cumin, salt, and freshly cracked pepper.   3. Combine salad ingredients: In a large mixing bowl, add the prepped cucumbers, drained sweet corn, chopped rotisserie chicken, cilantro, sliced green onions, diced jalapeno, red onion, and red bell pepper. Mix gently to combine all the fresh ingredients evenly.
