Ingredients

Beef

  • 1 pound ground beef
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon oregano
  • ½ teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Sweet Potatoes

  • 2 medium sweet potatoes
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika

Bowl

  • 4 cups shredded lettuce
  • 1 cup grape or cherry tomatoes, sliced in half
  • ½ red onion, sliced
  • ¾ cup shredded cheddar cheese

Special Sauce

  • ¼ cup mayonnaise
  • 1 tablespoon mustard (yellow mustard recommended)
  • 1 tablespoon ketchup
  • 1 tablespoon sweet relish
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder

Instructions

  1. Preheat Oven: Preheat the oven to 400 degrees Fahrenheit to prepare for roasting the sweet potatoes.
  2. Prepare Sweet Potatoes: Wash and cube the sweet potatoes, or cut them into fries or wedges according to preference. Toss them in a bowl with olive oil and all the specified spices until evenly coated.
  3. Roast Sweet Potatoes: Line a baking sheet with parchment paper and spread the sweet potatoes out evenly. Roast in the oven for about 30 minutes or until they are fork-tender and nicely browned.
  4. Cook Ground Beef: While the sweet potatoes roast, heat a skillet over medium heat and add the ground beef. Cook until browned, then season with onion powder, garlic powder, oregano, paprika, salt, and black pepper. Optional: add a tablespoon of butter to enhance richness.
  5. Assemble Bowls: Once cooked, allow the beef and sweet potatoes to cool slightly to avoid wilting the lettuce. In each bowl, layer shredded lettuce, followed by tomatoes, seasoned ground beef, roasted sweet potatoes, sliced red onions, and shredded cheddar cheese.
  6. Make Special Sauce: Whisk together mayonnaise, mustard, ketchup, sweet relish, garlic powder, and onion powder until smooth.
  7. Serve: Drizzle the special sauce over the assembled bowl and enjoy your nutritious and delicious sweet potato burger bowl!

Notes

  • You can substitute ground beef with ground turkey or chicken for a leaner option.
  • Yellow mustard is recommended for the special sauce, but any mustard variety will work.
  • Letting the beef and sweet potatoes cool before adding to the bowl prevents lettuce from wilting.
  • Add pickles to the bowl for extra flavor if desired.
