Ingredients

Pasta

  • 12 ounces spaghetti or linguine

Sauce & Toppings

  • 2 cups cherry tomatoes
  • 4 cloves garlic, minced
  • 3 tablespoons olive oil
  • ¼ teaspoon red pepper flakes (optional)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup reserved pasta water
  • 8 ounces burrata cheese
  • ¼ cup grated parmesan cheese
  • ¼ cup fresh basil leaves, torn

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1/4 cup of pasta water before draining the pasta.
  2. Sauté the Garlic: Heat olive oil in a large skillet over medium heat. Add the minced garlic and cook for about 30 seconds until fragrant but not browned.
  3. Cook the Tomatoes: Add cherry tomatoes, salt, black pepper, and red pepper flakes to the skillet. Cook for 8 to 10 minutes, stirring occasionally, until the tomatoes soften, burst, and release their juices to create a light sauce.
  4. Combine the Pasta and Sauce: Add the drained pasta to the skillet with the tomato mixture. Pour in the reserved pasta water and toss continuously to evenly coat the pasta with the sauce.
  5. Add the Burrata: Transfer the pasta to serving bowls or a large serving platter. Tear the burrata cheese over the hot pasta so it softens and melts slightly, enriching the dish with creaminess.
  6. Finish and Serve: Top with grated parmesan cheese, torn fresh basil, and additional black pepper if desired. Serve immediately while warm for best texture and flavor.

  • You can substitute burrata with fresh mozzarella if burrata is unavailable, though it won’t be quite as creamy.
