Tomato Burrata Stuffed Chicken

Juicy chicken breasts stuffed with creamy burrata and sweet cherry tomatoes, baked until tender and finished with fresh basil and optional balsamic glaze for an elegant yet simple meal.

Ingredients

  • 4 boneless skinless chicken breasts
  • 8 ounces burrata cheese
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons balsamic glaze (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice a pocket into the side of each chicken breast, being careful not to cut all the way through.
  3. In a bowl, combine cherry tomatoes, minced garlic, 1 tablespoon olive oil, salt, pepper, and Italian seasoning.
  4. Tear the burrata into pieces.
  5. Stuff each chicken breast with burrata and a spoonful of the tomato mixture. Secure with toothpicks if needed.
  6. Brush the outside of the chicken with the remaining olive oil and season lightly with additional salt and pepper.
  7. Place the stuffed chicken in a baking dish and bake for 25–30 minutes, or until the internal temperature reaches 165°F (74°C).
  8. Broil for 2–3 minutes at the end for a golden finish, watching carefully.
  9. Remove toothpicks and let the chicken rest for a few minutes.
  10. Top with fresh basil and drizzle with balsamic glaze before serving if desired.

Notes

  • Do not overstuff the chicken to prevent filling from leaking out.
  • Secure openings with toothpicks if necessary.
  • Fresh mozzarella can be substituted for burrata.
  • Add sautéed spinach or sun-dried tomatoes for variation.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
