This Caesar Wrap is a fresh and flavorful way to enjoy the classic Caesar salad in a convenient handheld form. Featuring crisp romaine, kale, radicchio, creamy avocado, chickpeas, and red onion, all tossed in a tangy Caesar dressing and wrapped in a soft flour tortilla, this meal is perfect for a healthy lunch or easy dinner. It can be made vegan by skipping the cheese and using a vegan Caesar dressing, making it a versatile option for various dietary preferences.

Ingredients

Vegetables and Greens

  • 6 small romaine lettuce leaves
  • 1 curly kale leaf, stemmed
  • 2 radicchio leaves
  • ¼ cup sliced red onion
  • ½ avocado

Protein

  • ⅓ cup cooked chickpeas, drained and rinsed

Other Ingredients

  • Parmesan shavings, optional
  • Lemon wedge, for squeezing
  • Sea salt and freshly ground black pepper, to taste
  • Homemade Caesar Dressing or Vegan Caesar Dressing, for drizzling
  • 1 12-inch flour tortilla

Instructions

  1. Prepare the Base Ingredients: Place the romaine, kale, radicchio, cooked chickpeas, avocado, and sliced red onion on a cutting board. If desired, add shaved Parmesan on top. Squeeze a lemon wedge over the mixture for brightness, then season with sea salt and freshly ground black pepper.
  2. Mix the Salad: Drizzle generously with your choice of Caesar dressing. Roughly chop all the ingredients together on the cutting board, mixing as you chop to evenly distribute flavors and dressing.
  3. Assemble the Wrap: Spoon the mixed salad into the center of the 12-inch flour tortilla. Fold the tortilla to close the wrap securely. Optionally, serve with additional dressing on the side for dipping or extra flavor.
