Ingredients

  • 2-3 fresh strawberries, mashed (about 2 tablespoons puree and liquid)
  • 1 tablespoon chopped fresh basil

Optional Sweetener

  • 2 teaspoons honey (optional)

Instructions

  1. Whip the butter: Place the room temperature unsalted butter and salt in a medium bowl. Using a hand-held electric mixer or a whisk, whip the butter until it becomes light and fluffy, incorporating air to create a spreadable texture.
  2. Prepare the strawberry puree: In a separate bowl, mash 2-3 fresh strawberries thoroughly with a fork until you achieve approximately 2 tablespoons of puree including the juice.
  3. Combine strawberry puree with butter: Add the strawberry puree and its liquid to the whipped butter. Whip the mixture again until it turns a pink color, the texture is fluffy, and the strawberries are fully blended into the butter.
  4. Fold in basil and season: Gently fold the chopped fresh basil into the strawberry butter mixture. Taste and adjust the seasoning as needed. If the mixture isn’t sweet enough, add the optional 2 teaspoons of honey and stir well.
  5. Serve or store: Serve the whipped strawberry basil butter immediately, or refrigerate in an airtight container for up to 2 weeks to preserve freshness.
