Ingredients

Filling

  • 2 cups cooked chicken (shredded)
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup finely chopped onions
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon pepper
  • 1/2 teaspoon salt

Other

  • 6 large flour tortillas
  • Cooking spray or oil (for greasing)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the roll-ups.
  2. Prepare Filling: In a large bowl, combine the shredded chicken, shredded cheese, finely chopped onions, mayonnaise, Dijon mustard, garlic powder, paprika, salt, and pepper. Mix thoroughly until all ingredients are evenly coated and well blended.
  3. Assemble Roll-Ups: Lay each flour tortilla flat on a clean surface. Place about 1/4 cup of the prepared chicken mixture in the center of each tortilla. Carefully roll the tortilla tightly around the filling, folding in the edges to secure the filling inside.
  4. Arrange in Baking Dish: Place the rolled tortillas seam-side down into a lightly greased baking dish. Lightly spray the tops of the roll-ups with cooking spray to promote browning.
  5. Bake: Bake the roll-ups in the preheated oven for 20 to 25 minutes, or until they turn golden brown and are heated through.
  6. Cool and Serve: Remove the dish from the oven and allow the roll-ups to cool for a few minutes before slicing and serving to enjoy safely and for best texture.

Notes

  • You can substitute cheddar cheese with mozzarella or your favorite melting cheese.
  • For extra crispiness, brush the tops of the roll-ups lightly with oil instead of cooking spray.
  • Customize the filling by adding chopped bell peppers or jalapeños for additional flavor and heat.
  • Leftover roll-ups can be stored in the refrigerator for up to 3 days and reheated in the oven or microwave.
  • Using warm tortillas can make rolling easier and prevent cracking.
